    BBQ Walleye and Pike Rolls ......................................................................




    This recipe was modified from one that used Sole to Walleye and Northern Pike Filets

     Lay out de-boned and skinned  filets on a cutting board, brush both sides liberally with olive oil, lay a thin slice of your favorite cheese the length of filet place 2 or 3 sprigs of asparagus crosswise on top and sprinkle liberally with FRESH ground green pepper corns.  Roll filet from widest part to narrowest and seal cheese in as well as you can, use a lot of wooden toothpicks. BBQ: Sear on high heat for 1 minute then low heat for 7-10 minutes (depending on filet size - chef may have to sample while cooking ) Brush with olive oil while cooking once or twice. Cook on high heat for last minute again. Serve with rice dish or pasta with tomato sauce, and Garden or Greek salad.
